That is a good question. I am sorry for my lack of presence and starting my blog and then going MIA for over a week. I’m sorry. I hope you forgive me and continue reading.
The past week has been pretty busy. As mentioned before, I recently moved to Charlottesville and am still finding my routine. I am someone who likes to have a plan, routine and make lists of things that need to be done. So this move has made that all difficult but I am trying to be patient and keep telling myself it all takes time.
While trying to find my routine, I have been trying multiple classes at the gym to see which work for me and provide me with a good challenge. I have found some so far but still want to have an open mind about others I have yet to try. Hopefully, at the start of the New Year, I will have my gym routine down. Before would be even better!

These are pumpkin chocolate chip cookies that I have been wanting to try so I made them for my friend who came in to visit and for my co-workers. They seem to be a hit and were gone before I knew it!
I had some eggs to use up before they went bad so I made scrambled eggs with some spinach, onion and green pepper. Of course, I also had to add some ketchup on the side. It may not look pretty but it was pretty darn delicious.
Next up was a little concoction of ingredients left in my fridge. I was a little too lazy to go to the grocery store so I made a quesadilla of veggies and some mozzarella cheese. Since I no longer have a handy quesadilla maker available to me, I had to use the stove-top. It was a little more difficult to cook and turned up a little burnt (on the opposite side shown, of course!) but delicious none the less.
Now this meal was yummy but no nearly enough for me! This is a No Bull Burger made locally in Charlottesville. With their suggestion of adding cheese to the burger, I did just that. Then I added it over a bed of spinach and some ketchup “dressing.” Since, after my last bite, my stomach was still asking for more food. Sooo I defrosted a slice of my pumpkin bread and had some for dessert. Now, that is what I call a yummy and healthy dinner 🙂
After a 2 mile run and 1 hour Pump Challenge class, I am home needing food quickly. I jumped in the shower and then decided to whip up something in less than 5 minutes. I decide to make a personal pizza. I used a tortilla shell with marinara sauce, mozzarella cheese and spinach. It was pretty good, I might add. I also had some green tea and peanut butter crackers after to satisfy my hunger.
This past weekend, I went to DC on Friday to visit one of my college roommates. We both had long weeks of work so wanted to whip up some comfort food with a glass of wine. We decided to do just that and made some Mac & Cheese with Broccoli while sipping on some Pinot Grigio. We definitely missed something in the recipe and after each having a bite, we knew it needed something extra. She decided to add some hot sauce while I went with my favorite “dressing” of ketchup.
I did not even try to set my alarm earlier than it need to be on Saturday for a workout. I knew I was going to be doing lots of walking this weekend so I took both Saturday and Sunday off. After waking up and whipping up some quick oreo krispies, my roommate and I had off to Annapolis for the rest of the weekend. Once we arrived, we parked and walked around Annapolis until my parents arrived. We then met up with them and went to the Naval Academy. We walked around and then hit up the Mid Store for some shopping. This is the best store in the world, it has everything you could ask for…Navy apparel to electronics to groceries to clothing to stationary. My family and I had limited time there so we did little damage, the credit card is probably happy about that one! After finishing shopping, we went to my brother’s host family’s house and had lunch. After lunch, we went to the Navy v. East Carolina football game. Unfortunately, they lost but it was a great game to be at!
After the game, we were all exhausted so went back to my brother’s host family’s house, had a beer and passed out. The next day, we all hung out and then I headed back to Charlottesville around lunch time. It was a great weekend with my roommate and parents. I really do miss them when I am here in Charlottesville.
Sunday night I wanted something comforting again and something that would have tons of left overs. The first thing that came to my mind was Oatmeal Pancakes. I made a whole batch so I would have a lot left to eat this week. I topped my pancakes with peanut butter, syrup and cinnamon sugar. It was D.E.L.I.C.I.O.U.S and a great way to end the weekend!
Monday night, I did not have any idea what I felt like so I decide to mix a few ingredients and call it dinner. I made some brown rice, half a No Bull Burger and broccoli and cauliflower mixture. It made 2 servings, perfect for dinner and lunch the next day.
And my last dinner for this post…it was definitely my favorite. It looks very ugly but I am telling you, it was heaven in a cup. After a tough Cycle Plus class which combined Spinning and some strength training with kettle bells, I wanted a smoothie. I wanted to make sure it was healthy so a combined some ingredients and hoped for the best. It definitely left me craving another!! I used blueberry greek yogurt, vanilla soy milk, frozen banana and spinach. You could not taste the spinach but believe me, there was lots of spinach in it! Now, I am telling you that you need to make it asap!
Well, that is enough for my food. As far as my fitness has gone, it has been pretty random. I have been in weird moods and struggling with finding the right food for the day now that I work out at the end of the work day. In the past week, I have run a total of 8ish miles (not good, especially since I was doing so well before), gone to spinning 4 times and found a new love for Body Pump.
I am really go to try to write a post every other day and eventually try for every day. I am so sorry for the long post but once I start, it is hard to stop. Hope you are all doing well and challenging yourself everyday to make yourself better and make the world a better place.
